Merez Culmer

The most famous of Bahamian desserts is a good warm guava duff, and Chef Merez Culmer prides himself on his unique take on this Bahamian favourite. His specialty guava duff balances the sweetness of the dough and sauce with the added flavour of cream cheese.

At 28 years old, Merez is the sous-chef at 1648 Bar & Grille located at Eleuthera’s French Leave resort. Born and raised in Eleuthera, Chef Merez graduated from the culinary and hospitality programme at College of The Bahamas. He recently returned to Eleuthera after gaining years of valuable experience working at the Atlantis and the One and Only Ocean Club.

“I came home simply because there is bigger and better taste here!” says Chef Merez. “Here we cook Bahamian food and mix in a touch of international food to bring more flavor.”

Merez believes that to create a Stronger Bahamas, there must be unity amongst the people, explaining that this notion is very similar to the way a kitchen operates.

“The kitchen comes to life with each one of our chefs. Everyone has their talent and when we put it together, we create perfection. That is what a Stronger Bahamas is too, it’s working together to make the country a better place for all Bahamians.”

When Chef Merez reflects back on his accomplishments in his career, he is filled with a sense of pride. He also feels a great sense of responsibility knowing he is a leader in his field, and wants to continue inspiring young Bahamian chefs to work together to build a #StrongerBahamas.
