“A Stronger Bahamas does not depend on other countries to sustain itself,” says Hilary Hilton Gibson, Manager of The Tiki Hut Café on Harbour Island, Eleuthera. Hilary migrated to the island from Nassau for the love of his business – making good food that Bahamians and visitors love.

It was at the Tiki Hut where Hilary first created his signature dish – the Treasure Chest. The Treasure Chest mixes the famous conch salad with ceviche, to create a dish visitors flock to Harbour Island for.

Hilary says it’s his job to ensure his guests enjoy their experience in Harbour Island and in The Bahamas if they are visiting. Interacting with his guests and watching them fall in love with Harbour Island is what motivates him to succeed. “I want my guests to be fascinated with The Bahamas,” says Hilary.

“A Stronger Bahamas is a place where everyone is just happy” says Hilary.
